Bring a large pot of salted water to a boil and cook macaroni until al dente. Drain and rinse with cold water to stop cooking. Transfer to a large mixing bowl and let cool completely.
Make the Creamy Dill Pickle Dressing
In a small bowl, whisk together:
Mayonnaise
Sour cream
Pickle juice
Dijon mustard
Garlic powder, salt, and pepper
Stir until smooth and well combined.
Assemble the Salad - Add chopped dill pickles, red onion, and fresh dill to the cooled pasta. Pour the dressing over the pasta mixture and gently toss until evenly coated. If using, mix in cheese, boiled eggs, or celery for extra texture and flavor!
Chill & Serve! Cover and refrigerate for at least 1 hour (overnight for best flavor!). Give it a quick stir before serving and adjust seasoning if needed
