Brown the ground beef in a large pot or Dutch oven over medium heat until no longer pink. Drain excess grease.
Add chopped onion and minced garlic, cooking until soft and fragrant.
Stir in tomato sauce, diced tomatoes, beef broth, Italian seasoning, paprika, salt, and black pepper.
Bring to a boil, then add the uncooked macaroni. Reduce heat to low, cover, and simmer 15–20 minutes, stirring occasionally, until the pasta is tender.
Remove from heat. Stir in cheddar cheese (if desired) and let rest 5 minutes before serving.
