Cajun Cheddar Chicken
  1. Get your prep done before you start cooking: combine the chicken fillets with Cajun seasoning. Mince the garlic cloves and grate the cheddar.

  2. Heat your skillet over medium high, add bacon and cook until crispy. Remove from skillet onto a plate layered with paper towel.

  3. Reduce heat to medium and melt the butter. Add chicken fillets and sear 5 minutes per side. Remove from skillet onto a clean plate.

  4. Reduce heat to medium low. Add garlic and sauté for 30 seconds. Stir in flour, cook for 1 minute while stirring constantly.

  5. Add chicken broth, stir to combine. Then pour in milk, bring to a gentle simmer. Add spinach and stir until wilted.

  6. Reduce heat to low and stir in cheddar. Add chicken back to the skillet, simmer for 5 minutes or until cooked through.

  7. Finish off with crispy bacon and freshly grated black pepper. Enjoy!
