Quinoa And Chunky Veggies With Ginger Lemon Dressing
  1. Cook the quinoa and make sure it's al dente and not overcooked. Set aside to cool down.

  2. In a small bowl or a jar with a lid, mix all the dressing ingredients together.

  3. Wash all the veggies (don't peel) and slice to chunky pieces.

  4. Place all the veggies in a large mixing bowl and add the cooled quinoa.

  5. Mix it all with your hands.

  6. Add the pumpkin seeds and the dressing.

  7. Keep mixing until well combined.

  8. Serve and enjoy.
