Cook the quinoa and make sure it's al dente and not overcooked. Set aside to cool down.
In a small bowl or a jar with a lid, mix all the dressing ingredients together.
Wash all the veggies (don't peel) and slice to chunky pieces.
Place all the veggies in a large mixing bowl and add the cooled quinoa.
Mix it all with your hands.
Add the pumpkin seeds and the dressing.
Keep mixing until well combined.
Serve and enjoy.
