Add all the spice mix in a bowl and whisk to form a smooth paste.
Add chopped vegetables, 1tbsp oil, and tofu in the paste
Transfer the content of the bowl in a large Ziploc bag and mix everything in it.
Keep the ziplock bag in the fridge for 15 minutes or longer for the veggies, tofu to absorb the spices nicely.
Remove the bag from the fridge.
Add veggies and tofu on each skewer (as per choice).
Brush each side of the skewered veggies+tofu with oil.
Keep the skewers on a plate (and follow the choice of the cooking method below)
BBQ: Fire up the grill and add wood or coal as per choice.
Place 3-4 tofu skewers on the grill and cook for 2-3 minutes on each side.
Turn to another side and grill another 2-3 minutes (keep an eye as tofu burns easily).
Once the veggies are cooked, remove skewers from the grill.
Transfer to a serving plate and serve along with tamarind sauce or any other sauce.
Oven: Preheat oven at 180F.
Spray a baking tray/pizza stone with oil.
Place 6 skewers and spray oil on it.
Bake for 5-7 minutes.
Remove the skewers and turn sides. Broil for a minute (on medium temperature for the charred effect).
Remove carefully from oven and transfer to a serving plate.
Preheat Air Fryer at 180F.
Spray the skewers on both sides with oil.
Place 4 skewers in the air fryer basket and air fry for 10 minutes.
Remove the skewers and turn sides. Bake for 3 minutes.
Remove the skewers carefully from Air Fryer and transfer to a serving plate.
