4 russet potatoes
½ yellow onion
2 TBSP butter
½ cup heavy whipping cream
Salt and pepper
Half lbs bacon
1 cup cheddar cheese
Fry ½ lbs bacon
Fully skin 4 russet potatoes and chop unto 1" cubes
Preheat oven to 450°
Boil potatoes in large pot for 30 minutes
Batonnet onion and add to potatoes, continue boiling for 15 minutes
Strain onion and potatoes
Add back to pot
Add butter, heavy whipping cream, salt, and pepper to pot and mash together
Add to 14" casarole dish and evenly spread.
Add bacon* and then cheese on top.
Bake in oven until cheese is golden brown (approximately 35 minutes)
*alt: add bacon after removing dish from the oven
