Stack about 10 wonton wrappers and slice them about ¾-inch x 3-inch strips. (You can cut them thinner if preferred.)
Add about 3 inches of oil to a medium pot. Heat over medium heat until the oil reaches 360°F. Carefully add about a quarter of the wonton wrapper strips into the hot oil, making sure to not overcrowd the pan.
Cook until golden brown, about 2-3minutes, or until the edges start to brown. Place the fried strips in a paper towel lined bowl to cool.
In the same pot of oil, add ½ of dried vermicelli noodles and cook for 1-2 mins until puffed or doubled in size. Set on a paper towel lined bowl and allow to cool.
In a large bowl, combine all the salad ingredients, except the fried wontons.
Pour over dressing and toss to combine well.
Garnish with crispy wontons, crispy vermicelli and cilantro leaves (optional). Serve and enjoy!
