Beef Kofta Wraps
  1. Combine beef, tomato paste, garlic cloves, paprika, cumin, salt, black pepper, turmeric, garlic powder, cinnamon, parsley, cilantro, yellow onion, and grated zucchini in a bowl

  2. Mix in olive oil until well combined

  3. Flatten the kofta mixture onto a sheet pan and cut into pieces

  4. Wrap roasted garlic heads in aluminum foil with salt and oil

  5. Place kofta and garlic in the oven until kofta is cooked through

  6. Prepare salad by combining red onion, cherry tomatoes, cucumber, parsley, lemon juice, salt, and pepper

  7. Toss salad and set aside

  8. Make tahini sauce by mixing roasted garlic, olive oil, Greek yogurt, mayo, tahini, lemon juice, salt, black pepper, and paprika

  9. Add cold water to tahini sauce until desired consistency is reached

  10. Assemble wraps with kofta, salad, and tahini sauce
