Tofu Dan Dan Noodles
  1. Crumble the medium firm tofu

  2. Mix tofu crumbles with dark soy sauce, rice wine vinegar, chinese 5 spice powder, sugar, white pepper, and msg

  3. Heat neutral oil in a pan and add spring onion stalk (white bit), minced ginger, and chopped garlic

  4. Add the tofu mixture to the pan and cook until crumbled and cooked through

  5. In a bowl, combine sesame paste, chilli crisp, sesame oil, light soy sauce, sugar, and black vinegar

  6. Add noodle water to the sauce mixture to reach desired consistency

  7. Cook the chinese noodles according to package directions

  8. Boil the broccolini

  9. Assemble the dish by placing noodles in a bowl, topping with the sauce, cooked tofu crumbles, and broccolini

  10. Garnish with spring onion greens, crushed peanuts, and chili oil
