Chewy Marshmallow Stuffed Vegan Cookies
  1. Add all the dry ingredients except marshmallows in a medium mixing bowl and stir. Then add the wet ingredients, using 4 Tbsp of soy milk at first, and stirring until dough becomes less dry. Add more milk if needed until you get a dough consistency.

  2. Roll dough into 12 balls, then press three mini marshmallows into each cookie and re-roll into a ball.

  3. Preheat oven to 325 F. Place cookie balls on a greased baking tray and bake 12 minutes on the center rack. (They will look underdone when you take them out but will firm up while cooling).
