Instructions:

Sear the Pork: In a large pot, heat olive oil over medium heat. Add pork chunks, season with salt, pepper, and cumin, and sear until browned on all sides. Remove from pot and set aside.

Roast the Peppers & Tomatillos: In a dry skillet or oven, roast the poblano peppers, jalapeño, and tomatillos until charred. Once cooled, remove the skins from the peppers.

Blend the Salsa Verde: In a blender, combine roasted tomatillos, peppers, garlic, onion, cilantro, chicken broth, oregano, and salt. Blend until smooth.

Simmer the Stew: Return pork to the pot and pour the green sauce over it. Simmer on low heat for 1.5 to 2 hours until the pork is tender and the flavors meld together.

Serve & Enjoy: Serve hot with Mexican rice, refried beans, and warm flour tortillas! 🌮🔥😋
