Quick Apple Sponge
  1. Preheat oven to 210-230C.

  2. In a basin, place butter, sugar and boiling water, and beat well. Add egg and beat again.

  3. Beat in flour and salt.

  4. Place hot fruit in a pie dish, cover with sponge mix, bake for 20-30 minutes until golden, and sponge comes clean with a skewer.
