Peel the kohlrabi, making sure to remove all of the thick skin and any tough green below it.
Use a mandolin to slice into thin rounds.
Place in a mixing bowl and salt with 1 tsp fine sea salt for 30 mins.
Squeeze to remove as much water as possible.
Mix all of the remaining ingredients to make the dressing and toss it into the kohlrabi using your hands.
Finish with your toppings of choice.
