Slow Cooker Black Bean Soup
  1. Add all of the ingredients (except the lime juice and salt) to a slow cooker. Stir to combine and cook on low for 8 hours or high for 4 hours.

  2. Remove the lid and use an immersion blender to blend half of the soup. You can also transfer half of the soup to a standing blender, blend it up, and add it back to the slow cooker. Add the lime juice and stir to combine. Taste and add salt as needed.

  3. Add soup to a bowl with optional toppings.
