For the chicken combine your cream cheese, cherry tomatoes & spinach.
Butterfly the chicken breast, coat with seasonings, oil & stuff the mix inside.
Secure with toothpicks and bake @ 375F for 30-40 minutes. (Until internal temp reaches 165F)
For the sauce combine your cream, butter, parmesan, garlic and seasonings to a sauce pan over medium high heat. Whisk until it thickens.
Add your spinach and tomatoes and let it simmer until the spinach wilts. Pour over your chicken breast & enjoy.
