Vegan Protein Balls
  1. In a large mixing bowl, combine all the ingredients: rolled oats, peanut butter, maple syrup, ground flaxseed, protein powder, chocolate chips or nuts (if using), vanilla extract, and a pinch of salt.

  2. Mix everything together until well combined. You may need to use your hands to fully incorporate the ingredients.

  3. Once the mixture is well combined, scoop out small portions and roll them into balls using your hands. You can make them whatever size you prefer, but typically they’re about 1 inch in diameter.

  4. Place the rolled balls on a baking sheet lined with parchment paper.

  5. Chill the protein balls in the refrigerator for at least 30 minutes to help them firm up.

  6. Once chilled, store the protein balls in an airtight container in the refrigerator for up to one week.
