Drizzle 2 medium chicken breasts with olive oil and season with salt and pepper
Bake at 400°F for 22–25 minutes, or until cooked through
Let chicken cool slightly, then shred in a stand mixer
Add the shredded chicken to a large bowl
Mix in mayo, Dijon mustard, chopped apple, diced shallot, diced celery, and fresh tarragon
Mix everything together until it's creamy and well combined
Taste and adjust salt, pepper, or tarragon as needed
