Mix the flour, yeast, sugar, salt, and warm water in a large bowl.
Knead the dough for about 10 minutes until smooth.
Let the dough rest for 15 minutes.
While the dough is resting, melt the butter and mix it with the oil.
After resting, divide the dough into 12 equal pieces.
Roll each piece into small circles.
Layer the dough circles in a bowl, spreading each one generously with the butter mixture in between.
Let the layered dough circles rest for 15-20 minutes.
Stretch each dough circle until it’s very thin and transparent.
Add your choice of filling (such as feta and mozzarella).
Shape the borek according to your preference.
Preheat the oven to 400°F (200°C).
Bake the borek for 18-20 minutes, or until golden brown.
