Place the metal trivet inside of the Instant Pot. Place the chicken breast-side up on the trivet.
Add a cup of water and salt and pepper the bird.
Seal the lid and set to High Pressure: Cook 6 minutes per pound (Example: 4 lb chicken = 24 minutes)
Let the pressure naturally release for 10–15 minutes, then quick release the rest.
For crispy skin: Transfer chicken to a baking sheet and broil in the oven 3–5 minutes until golden.
