Pat lamb chops dry.
Season both sides with salt, pepper, paprika, and rosemary or thyme.
Optional: marinate for 30 minutes to overnight for deeper flavor.
Heat a heavy skillet over medium-high heat.
Add olive oil.
Add lamb chops in a single layer.
Cook 3–4 minutes per side for medium-rare or 4–5 minutes per side for medium.
Sear until golden brown crust forms.
Remove lamb chops and set aside to rest.
Lower heat to medium.
Add butter to the same pan.
Once melted, add garlic, rosemary or thyme, and chili flakes (optional).
Sauté 30–60 seconds until fragrant.
Return lamb chops to pan.
Spoon garlic butter over the top continuously.
Add lemon juice and fresh parsley.
Cook together for 1–2 minutes.
Let flavors combine and coat the meat.
Let lamb rest for 5 minutes before serving.
Serve with extra pan sauce drizzled over.
