Wash yu choy thoroughly and bring a large pot of water to boil.
While that is happening combine the ingredients of the oyster sauce mixture in a bowl and set aside. In a small sauce pot, heat 1 tablespoon of oil over medium heat and add in the sliced garlic. Cook until golden then remove from the oil onto a clean plate.
Leave 1 Tbs of oil in the sauce pot and pour the rest out. Turn heat down to low and add oyster sauce mixer to the oil, (Stand back as the oil may splatter) bring the mixture to a simmer in the turn off the heat and set aside.
Blanch choy sum in boiling water for bout 30 seconds. They should turn a bright green color. Remove and arrange them on a platter length wise. Some water may collect on your platter form the blanching process, carefully pour this out or it will make the sauce watery. Pour the sauce mixture over the veggies and scatter the crispy golden garlic slices on top and enjoy!
