Veggie Loaded One Cup Quiche
  1. Grab a large bowl and toss in all your ingredients (except the tomato). Give everything a hearty mix to combine all those vibrant veggies and flavours.

  2. Pour the mixture into a lined pie dish. Flatten it out and, if you’re using it, top with those lovely tomato slices.

  3. Pop it in the oven and bake at 180°C for about 50 minutes.
