  1. For the dough: Stir flour, salt, and yeast in a bowl. Add warm water and mix until most of the flour is moistened. Knead the dough until it forms a sticky ball. Refrigerate covered for 12 to 24 hours.

  2. For the sauce: Crush and drain tomatoes. Process in a food processor with oil, garlic, sugar, salt, oregano, and pepper flakes until smooth.

  3. For the pizza: Remove dough from refrigerator and let sit at room temperature. Flatten dough in a cast-iron skillet. Let rest until slightly puffy. Spread sauce over dough, sprinkle Monterey Jack around the edge, and then mozzarella over the sauce. Bake. Cook the bottom crust on the stovetop after baking. Slice and serve.
