Croque Monsieur Pancakes
  1. Mix together the ingredients for the pancake batter, then let the batter sit for 30 minutes.

  2. Pour some batter on a heated frying pan, then once the pancake begins to firm, add in the ham and cheese, then cover with more batter and flip the pancake and fry until golden-brown on each side. Repeat this process for the remainder of the batter.

  3. For the white sauce, heat the butter in the pan and make a roux through adding the flour. Add in the milk and seasonings, then let the sauce thicken. Take off the heat and remove the bay leaves once the sauce is thick and creamy.

  4. Stack the pancakes in a loaf pan, pour the white sauce over them, and sprinkle shredded cheese on top. Bake at 350°F for 20 minutes.
