Stoved Chicken Recipe
  1. Heat half the butter with oil in a large frying pan. Fry chicken and bacon for 5 minutes until lightly browned.

  2. In a large ovenproof casserole, layer potatoes and onions. Season, add thyme, and dot with butter.

  3. Place chicken and bacon over the first layer. Season and dot with butter.

  4. Add the remaining onions and top with more potatoes. Season and dot with butter.

  5. Pour chicken stock over the layers.

  6. Cover and bake at 300°F (150°C) for 2 hours until chicken is tender and potatoes are cooked.

  7. Sprinkle with snipped chives before serving.
