Lentil Tofu
  1. Soak half a cup of lentils, such as red lentils, brown lentils, or whole moong, overnight.

  2. Blend the soaked lentils with 1 cup of water until smooth.

  3. Transfer the mixture to a pan and heat it over medium heat.

  4. Stir continuously until the mixture thickens into a paste.

  5. Add a pinch of salt to the mixture.

  6. Pour the thickened mixture into a container and refrigerate for about an hour.
