In a bowl, combine soy sauce, pineapple juice, vinegar, minced garlic, brown sugar, salt, pepper, and red food coloring if desired
Mix the pork with the marinade, ensuring all pieces are well coated
Place marinated pork in a bag and refrigerate for 3 days
Cook on medium-low heat in a single layer, avoiding burning the sugar and garlic
Cook until caramelized and cooked through
