Garlic Scape “giardiniera”
  1. Process your preferred mix of vegetables.

  2. Combine all ingredients (except olive oil) in a pot.

  3. Mix over medium heat until the sugar and salt dissolves.

  4. Sachet all spices for a tidier process.

  5. While right off the stove, piping hot, strain or just pour this pickling liquid over your preferred mix of vegetables.

  6. Once your vegetables have cooled to around room temperature, top the preserved mixture with your olive oil.
