Prep oven: Preheat oven to 200°C / 400°F. Line a large baking tray with parchment.
Season veggies: In a bowl, toss potatoes, peppers, and onion with olive oil, garlic, paprika, Italian seasoning, salt & pepper. Spread evenly on the tray.
Add sausages: Place sausages on top (whole or cut into chunks).
Roast: Bake for 35–40 minutes, flipping sausages halfway, until potatoes are golden and sausages are cooked through.
Finish: Garnish with fresh parsley and serve hot.
