Crispy Smashed Potatoes With Broccoli And Cheese
  1. Preheat oven to 200c

  2. Boil your potatoes until just fork tender

  3. Grease your muffin tray and then place a potato into each slot

  4. Smash each potato with the back of a mug

  5. Then with a small spoon make a small indent for your filling

  6. Drizzle a little oil over each potato and season with salt, pepper and any other seasoning you fancy

  7. Add some broccoli and a sprinkle of cheese

  8. Bake for 20-25 minutes until golden and crispy
