Heat bacon grease or oil in a skillet over medium heat. Add beaten eggs and cook until set, flipping once. Remove and chop.
Increase heat to medium-high and add more grease or oil. Fry cold rice for 2–3 minutes until slightly crispy.
Add soy sauce and sesame oil, stir well, and cook 5 more minutes.
Stir in chicken, bacon, and peas. Cook until heated through.
Add chopped eggs and green onions, season with pepper, and toss.
