Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, mix cottage cheese and egg until smooth. Add almond flour, baking powder, salt, and garlic powder. Stir until a soft dough forms.
Divide the dough into small portions, roll each into a rope shape, and tie gently into knots. Place them on the prepared baking sheet.
Brush the knots with melted butter. Sprinkle with shredded cheese if desired. Bake for 15–18 minutes, or until golden brown.
Brush again with melted butter, sprinkle with parsley, and serve warm.
