Stuffed Cheese And Ham Scones
  1. Preheat your oven to 200℃ fan bake. Combine the flour and paprika in a bowl with a generous pinch of salt and pepper. Add the grated butter, and use your fingers to rub the butter into the dry mixture until a sandy consistency is reached.

  2. Add 100g of the grated cheese, the ham and spring onions then stir to combine and make a well in the center. Stream in half of the milk, mix, then add the rest of the milk as needed to reach a soft dough.

  3. Sprinkle some flour on a clean surface, then turn out the dough. Sprinkle with a little more flour, then shape into a rectangle around 3cm thick. Cut into 8 pieces, then lightly flatten one at a time, adding a small piece of cream cheese and a dollop of relish in the center. Wrap the dough around carefully, and pinch the edges to seal.

  4. Place seal side down on a tray, and arrange onto two lined trays. Brush with milk and sprinkle with the remaining cheese, then bake for 15-20 minutes or until golden brown and risen.
