Brown the pork on both sides (2–3 min each) in your slow cooker or a pan.
Whisk together soy/tamari, mirin/vinegar, honey, garlic, ginger and a splash of water, then pour over the pork.
Cook on LOW 4–6 hrs (or braise for 3 hrs if using a Ninja).
Remove pork, thicken sauce with cornflour/water mix, and pour over before serving.
Serve with fluffy egg fried rice and air fried green beans for a full balanced meal.
