Cozy One-pan Kebab & Potato
  1. Make the green herbs mixture: In a small food processor, add the onion, zucchini, parsley, and garlic. Process until smooth.

  2. In a mixing bowl, add the kebab ingredients and the green herbs mixture. Knead until fully combined. Shape into about 30 oval kebabs.

  3. Heat a wide pan over medium heat. Drizzle in the olive oil, then add turmeric, black pepper, and salt. Stir.

  4. Add the sliced onion and chopped celery (including the leaves). Mix and cook for about 2 minutes.

  5. Add the oval kebabs in two rounds and sear for about 2 minutes.

  6. Layer the sliced potatoes on top of the kebabs and season with flaky salt.

  7. Cover with a lid and cook for 45 minutes on low heat.

  8. Garnish with chopped parsley and enjoy.
