Chipotle Chicken Burrito Bowls
  1. Place chicken in a bowl with marinade ingredients (1 lime, 2 tbsp cilantro, 1.5 tsp chili powder, 1.5 tsp cumin, 1 tsp salt, ¼ tsp pepper, 2 tbsp olive oil). Mix until evenly coated. Cover and place in fridge for at least 20 mins.

  2. Add water and ½ tsp salt to a small pot and bring to boil over medium-high heat. Stir in rice. Turn heat to low, cover and simmer for 20 mins. Turn off heat and stir in 3tbsp cilantro, 1 tbsp butter, and the juice of 1 lime.

  3. Over medium heat, combine black beans with ½ tsp cumin, ¼ tsp chili powder, and ¼ tsp salt. Cook until warmed through, about 5 mins.

  4. Preheat pan over medium-high. Add 2 tsp oil. Sear chicken 5-6 mins per side. Let rest for 5 mins, then cube.

  5. Add ingredients to bowls and top with desired toppings!
