Scotch Broth
  1. Wash the barley and place in a deep pan. Add the stock, bring to the boil, skim, season and simmer gently for 1 hour.

  2. Add the Brunoise of vegetables and simmer until all the ingredients are tender (approx. 30 mins).

  3. Skim and adjust the seasoning. Sprinkle with chopped parsley when serving.
