Place 4 to 6 ice cubes into a tall glass or mason jar.
Squeeze half a medium fresh lemon directly over the ice, removing any seeds.
Measure exactly ¼ teaspoon of baking soda and sprinkle it onto the lemon juice. Let the fizz settle for 5 seconds.
Slowly pour 8 oz of cool filtered water over the ice.
Stir in raw honey and/or a pinch of Himalayan pink salt if using.
Give the drink 2 to 3 gentle stirs and drink within 5 minutes for best flavor.
