Add granola to a blender and blend until crushed and you have a fine powder.
In a food processor add in filling ingredients (cottage cheese, greek yogurt, vanilla bean paste, key lime juice, maple syrup, lime zest) and process for 12-15 seconds or until smooth and creamy. Be careful not to over process or you'll end up with a watery texture.
Layer the granola base and the filling in the jars.
Top with the whipped heavy cream if desired.
