Saucy Chicken
  1. Preheat oven to 200 degrees celsius.

  2. Add all the marinade ingredients into a jug and blend using an immersion blender.

  3. Add the sauce to your chicken pieces and coat well. Place in the fridge to marinate or set aside while your oven preheats.

  4. When you are ready to cook the chicken, place into a baking dish then bake for 20 minutes.

  5. After 20 minutes, remove the chicken from the oven, flip and bake for a further 20 minutes.

  6. Remove the chicken from the oven and flip back over. Remove all the pan juices and add it to a saucepan.

  7. Set your oven to the grill function on the highest temperature then grill the chicken for 5-10 minutes, watching it so that it does not burn.

  8. While the chicken grills, add the butter, cream and leftover marinade into the saucepan with the pan juices and simmer over medium heat until thickened. If it doesn't thicken, you can thicken it with a cornflour slurry.

  9. Remove the chicken from the oven then pour over the sauce and garnish with fresh coriander.

  10. Serve hot with some green salad and naan/rolls to mop up all the sauce.
