Ragù di Bologna (Bolognese)

Ingredients:

  1. Finely dice pancetta

  2. Heat pan over medium with a drizzle of olive oil

  3. Cook pancetta until lightly browned

  4. Add celery, onions & carrots and cook on high until softened

  5. Add ground beef and cook until lightly browned

  6. Add tomato paste and veggie broth

  7. Mix and cook until beef is fully cooked

  8. Add milk until it just covers everything

  9. Cook on high until "meat begins to take on a translucent, watery appearance"

  10. Turn heat to low and simmer for 3 hours, stirring occasionally
