Cut the cabbage in half through the stem, cut and discard the core and chop cabbage into 1-inch square pieces. Add to the slow cooker.
Chop the bacon. Place a large skillet over medium-high heat and once hot add the bacon. Cook until browned, save the grease.
Add the bacon, bacon grease, apple cider vinegar, broth or water, salt, and pepper and other seasoning to the slow cooker. Stir to combine.
Cook on high for 3 hours. If you prefer a crisper texture, only cook for 2.5 hours on high.
Garnish with chopped fresh parsley and serve.
