Aromatic Silken Curry Broth
  1. In a medium pot over medium heat, add Thai curry paste. Stir and warm for 1 to 2 minutes until fragrant and slightly caramelized.

  2. Add ginger, garlic, and kaffir lime leaves. Stir briefly to release aroma.

  3. Add vegetable broth and optional coconut palm sugar. Simmer gently for 10 to 12 minutes.

  4. Prepare konjac noodles according to package instructions. Set aside.

  5. Add leeks, mushrooms, broccoli, bell pepper, and zucchini. Simmer 5 to 6 minutes.

  6. Add lentil tofu and heat through for 2 to 3 minutes.

  7. Turn off the heat. Add lime juice and adjust seasoning.

  8. Serve ladle over noodles and finish with optional garnishes.
