Turn your oven on to 400 degrees and heat a large oven-safe skillet over medium-high heat.
Once hot, add a splash of olive oil and your chopped onion and garlic and saute until tender. (About 1-2 minutes)
Then add your crushed tomatoes, dried dill, oregano and red pepper flakes. Stir and turn your burner down to medium. Then let your sauce simmer for 10-11 minutes or until it has thickened slightly, stirring occasionally.
Next stir in your olives and place your shrimp on top of the sauce. (I'll usually push the shrimp down a little bit into the sauce.) Then season your shrimp with salt and pepper and sprinkle your feta cheese over the top.
Place the entire skillet in the oven and bake for 12-15 minutes or until the shrimp are cooked through.
Then turn your oven to broil and broil for 1-2 minutes or until the cheese is melty.
Sprinkle fresh dill over the top (if desired) and serve immediately with warm bread or over rice.
