Place the cut-side down on your cutting board, then slice it as thinly in long strips.Discard the core. Set Aside.
Heat a large saute pan or similar heavy-bottomed pot over high heat. Add oil and let heat until smoking point.
Add the cabbage, season with salt and pepper and sauté for 10 minutes, do not stir constantly. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized pieces.
Remove from heat and transfer to a plate.
Heat a large skillet on medium high heat and add the oil. Let heat for a couple of minutes and add the ground chicken and break it up in small pieces.
Add onion and garlic and cook for 3-5 minutes or until softened.
Add the soy sauce, hoisin sauce, maple syrup or honey, water or chicken stock and sesame oil.
Bring to a simmer and then add the cornstarch mixture while stirring.
Continue to cook until sauce has is thickened, about 3-5 minutes.
Serve over the cabbage noodles and Devour!
