Okra Couscous Puree
  1. In a small pot, bring ½ cup water to a boil over high heat. Add the couscous to the boiling water and stir slightly. Turn off the heat, cover the pot, and let sit for 5 minutes. Uncover, fluff the couscous with a fork, and transfer to a bowl.

  2. While the couscous is cooking, cook the okra. In a separate medium pot, bring ½ cup water to a boil over high heat. Add the frozen okra, return to a boil, and then cover the pot. Reduce the heat to medium-low and let simmer for 8 to 10 minutes, until the okra is very tender.

  3. Transfer the cooked okra and remaining cooking liquid to a blender and puree until smooth, scraping down the sides as needed.

  4. Add the pureed okra to the bowl with the cooked couscous and stir until well mixed. Let cool slightly and then serve or store until ready to use. Store in an airtight container in the refrigerator for 3 to 5 days.

Puréed okra is a slimy, slippery food. Combining it with couscous helps gives it more substance and makes it easier to feed to baby.
