Mix together light soy sauce, honey, apple cider vinegar, and boiling water until well combined
In a small pan, cook chilli oil with minced garlic and grated ginger on medium heat for 2 minutes until fragrant
Add the sauce mixture to the pan and cook on medium heat for 10 minutes or until reduced by half
In a large wok or pan on high heat, add vegetable oil and chicken mince, stirring until it begins to colour for 4-5 minutes
Add chicken stock powder and ¾ of the sauce to the mince and mix well for 2 minutes
Taste and season with salt and pepper as needed
Serve the honey soy chicken mince over brown rice with chopped spinach, carrot ribbons, cucumber, charred broccolini, spring onions, and coriander
Finish with a squeeze of lemon
