Place the mound of flour on a clean work surface. Sprinkle with the salt and toss with your fingers. Make a well in the center of the flour and pour the beaten egg in. Quickly combine with your fingers, and as the dough starts to come together, add 1 Tbs. water at a time. Keep kneading the dough for about five minutes, until you get a solid but soft ball of dough. Place it in a bowl and cover for 30 minutes to an hour.
On a floured work surface, divide the dough in half and begin rolling it out as a thin as you can. Once you get it very thin, take a pizza cutter and cut into strands.
Once the remaining dough is rolled out and cut, boil in salted water for about two minutes, until the pasta dances and floats at the top of the water.
Serve with your favorite sauce!
