Beat the eggs and sugar until light, pale and fluffy.
Heat the milk, water and oil in a microwave until boiling hot. Then mix in the vanilla essence. leave aside to cool down until warm.
Sift the flour and baking powder into the egg sugar mixture.
Using a spatula mix gently until combined.
Add the warm milk mixture and mix again gently with a spatula.
Pour the batter into a lined square baking tin ( 20 x 20cm).
Bake in a preheated oven for 25 minutes or until a skewer comes out clean.
Cool the cake completely in the pan before removing out.
Top with Strawberry Jam or any jam you love.
Top with 2 to 3 tablespoons of dessicated coconut
Cut and enjoy.
