Classic Vanilla Sponge Cake
  1. Beat the eggs and sugar until light, pale and fluffy.

  2. Heat the milk, water and oil in a microwave until boiling hot. Then mix in the vanilla essence. leave aside to cool down until warm.

  3. Sift the flour and baking powder into the egg sugar mixture.

  4. Using a spatula mix gently until combined.

  5. Add the warm milk mixture and mix again gently with a spatula.

  6. Pour the batter into a lined square baking tin ( 20 x 20cm).

  7. Bake in a preheated oven for 25 minutes or until a skewer comes out clean.

  8. Cool the cake completely in the pan before removing out.

  9. Top with Strawberry Jam or any jam you love.

  10. Top with 2 to 3 tablespoons of dessicated coconut

  11. Cut and enjoy.
