Latkes
  1. Grate russet potatoes and wash them extremely well

  2. Wring out the potatoes in a towel to remove excess moisture

  3. Grate the sweet onion and add it to the potatoes

  4. Add eggs, flour, cornstarch, salt, baking powder, and black pepper to the potato mixture

  5. Mix all ingredients thoroughly

  6. Heat neutral oil in a pan for shallow frying

  7. Form a ball of the mixture and place it in the hot oil

  8. Smash down the ball with a spatula

  9. Cook for 3.5 to 4 minutes per side until golden brown

  10. Remove latkes from oil and serve
